Cannellini Bean Soup with Crispy Pancetta, Green Onion & Truffle Oil

Celebrate National Soup Month with a new Italian Recipe. We asked Chef Damiano who is an Italian born chef and restaurateur who resides in the Destin/Santa Rosa Beach, Florida area for a recipe and boy did he deliver. This Cannellini Bean Soup recipe is one of the old classic soups from his homeland. This authentic Italian hearty soup is loaded with flavors and is sure to become a favorite. This is the perfect companion on a chilly night that folks from Italy have enjoyed for generations. The Cannellini beans are an excellent gluten-free source of protein and fiber and contain exceptional levels of iron, vitamin B-6, and magnesium. They also fill you up without adding too many calories! So treat yourself to this delicious soup and Enjoy!

Serves 4-6


5 cans Cannellini beans, divided
1 large carrot, peeled and diced
1 large onion peeled and diced
4 celery stalks, diced
2 green onions
4 slices chopped pancetta
4 tablespoons of extra virgin olive oil
2 garlic cloves, peeled and pressed
8 leaves sage
1/2 teaspoons truffle oil for each serving
2 cups of chicken broth
salt and pepper to taste


In a food processor add carrots, celery, onion, and garlic. Pulse until fine to make “soffritto.”

At the same time cut pancetta into small cubes and cook on low heat until crispy.

In a large pot add olive oil, ‘soffritto’ and sage on high heat for 6-8 minutes.

Remove one cup beans and set aside. Return the soup to the heat and stir in the remaining beans (fagioli) you set aside earlier to the chicken broth and bring to a boil. Then puree with an immersion blender until thick and smooth. Season with salt and pepper to taste and add remaining beans and heat through.

Serve in individual bowls topped with crispy pancetta, green onion, and a drizzle Truffle oil.
